Il panettone è un dolce di Natale tipicamente lombardo, ma non per Sal De Riso pasticcere rinomato della costiera amalfitana,il pasticcere di culto di Raiuno (realizza torte in dieci minuti a La prova del cuoco ed è uno dei giudici di Dolci ), lui che trionfò nella kermesse Re Panettone 2013, vincendo il premio miglior panettone milanese. “El panettun” milanese parla campano, Salvatore De Riso, di Tramonti, membro dell’Accademia Maestri Pasticcieri Italiani, ha riportato il calore e i sapori salernitani, grazie al suo eccellente panettone classico milanese, farcito con bucce d’arancia candita, uvetta sultanina e cedro diamante. ” Ricevere a Milano quel premio per il migliore panettone milanese, – spiega De Riso – è come se una squadra di calcio vincesse la coppa del mondo! “
Il suo primo laboratorio di pasticceria l’ha aperto nell’88, quando aveva 22 anni, dietro la tabaccheria di suo padre: «Utilizzavo il frullatore di mia madre e andavo a cuocere le torte dal mio vicino fornaio».
Oggi, a 48 anni, è il re a Tramonti, di una pasticceria di 1.500 metri quadrati su tre livelli, con 35 dipendenti e circa 4 milioni di fatturato annuo.Con ingredienti locali come la ricotta di Tramonti, le albicocche del Vesuvio, i limoni di Amalfi, la nocciola di Giffoni (sulle scatole dei suoi dolci la tracciabilità è sempre indicata) e cavalli di battaglia come la torta ricotta e pere e il tiramisù al limone, Sal ha conquistato non solo il Nord, ma mezzo mondo, dall’Arabia Saudita al Regno Unito: i suoi dolci sono a Londra da Harrods e a Parigi alle Galeries Lafayette. Ma ne sono golosi anche un bel po’ di potenti: Sal ha fornito torte ai principi di Montecarlo, al re dell’Arabia Saudita e ha realizzato per Papa Giovanni Paolo II la torta Giubileo al cioccolato e al mandarino. Ora sta lavorando al panettone del prossimo Natale: ai cinque cereali, con crema al miele millefiori e struffoli.
